Pumpkin Bread

….This is what my daughter ANNE often makes for the family. Especially my grandson SIWOO loves this pumpkin bread. Happy family where aunt ANNE always makes small bread of love for her nephew SIWOO. A family must be a relationship where each of us shares what we are good at…… I am so grateful. The big baby in my house said “No snacks today?!” My husband was going back and forth in the kitchen looking for snacks. So I made this bread for my husband. This is moist and tender, delicately flavored with pumpkin and cinnamon. It looks clunky, but it’s soft. As the smell of baking spreads through the kitchen, my husband’s footsteps become busier. I made 2 loafs, one for grandson and one for husband. My husband ate it deliciously by putting milk jam on the warm pumpkin bread. Thanks ANNE for sharing this recipe.

Servings: 2 loafs

Time: 1 hour 30 minutes

Ingredients:

  1. 1 stick unsalted butter
  2. 2 vanilla beans(or 1 Ts vanilla), cut it lengthwise and scrape all the seeds
  3. 1 can(15 oz) pumpkin purée
  4. 4 eggs
  5. 1/2 cup olive oil
  6. 2 cups all-purpose flour
  7. 1 cup whole wheat flour
  8. 1 1/2 cup muscovado
  9. 1 1/2 ts baking soda
  10. 1 ts sea salt
  11. 1 ts ground cinnamon
  12. 1/2 ts ground ginger
  13. 1/2 ts ground cardamon
  14. 2/3 cup water

Cooking Instructions:

  1. Two 8-inch loaf pans line with parchment paper.
  2. Heat a sauce pan with medium heat and add the butter to melt.

3. Cook until the frothy white milk solids sink to the bottom of the pan and turn a fragrant, nutty brown for 5–7 minutes. Brown butter can burn quickly, so watch it carefully. Set aside and cool down.

4. Put the water, vanilla beans, pumpkin purée, eggs, brown butter, and olive oil into a bowl to mix well with a whisk. Set aside.

5. Sift the all-purpose flour and whole wheat flour with a strainer once into a big bowl.

6. Add the muscovado, baking soda, sea salt, cinnamon, ginger, and cardamon into the big bowl to mix well.

7. Pour dry ingredients into liquid ingredients and stir to combine.

8. Preheat the oven to 350 F. Divide batter between the two loaf pans.

9. Cook in a preheated oven about 60 minutes(toothpick inserted into center of the loaf comes out clean).

10. After 60 minutes, turn off the oven heat and take out the loaf pans onto a counter. Allow bread to cool completely before removing from pan.

11. Serve it as a snack.
