Reindeer Yubuchobap(Fried Tofu Stuffed with rice)

….My grandson SIWOO told me “Santa Claus laughed hohohoho!!…..”. Christmas awaits my grandson everyday while he wears a reindeer engraved shirt. According to traditional legend in some parts of the world, Santa Claus’ reindeer are said to pull a sleigh through the night sky to help Santa Claus deliver gifts to children on Christmas Eve. “The Night Before Christmas” originally identified eight reindeer that lead Santa Claus’ sleigh every holiday. There are a lot of decorations coming up, so I picked one and tried it. I can hear my grandson’s laughter while making this. My grandson always runs to give me a big hug every time. I pray that my family have a blessed and healthy Christmas together.

Time: 1 hr

Ingredients:

  1. 4 cup steamed rice
  2. 12–13 pieces yubu(yubuchobap kit)
  3. 1 1/2 cup onion, minced
  4. 1/2 cup red paprika, minced
  5. 1/2 cup yellow paprika, minced
  6. 1 1/2 Ts Mat-Gan-Jang
  7. 2 ts fish sauce
  8. 1 Ts Sriracha chili sauce
  9. lotus roots for decorating
  10. canola oil to fry

Cooking Instructions:

  1. Heat up a pot with medium low heat and braise the yubu(fried tofu) with a sauce inside the kit for 5–7 minutes(flip them up and down 2–3 times). Turn off the heat and set aside for cooling down.

2. Heat up a pan with medium high heat and add the onion, red paprika, and yellow paprika to stir fry them until the moisture evaporates.

3. Add the Mat-Gan-Jang, fish sauce, Sriracha chili sauce and steamed rice to stir fry them well evenly. Turn off the heat and set aside for cooling down.

4. Make a rice ball with your hands and put it into a tofu pouch. Fill the pouch so much that it can’t close and the pouch opening exposes the rice inside. Put the yubuchobap on a plate and repeat it with the rest of the tofu pockets until all of them are full of rice.

5. Heat a pan with medium high heat and add avocado oil into the pan. Heat the oil to 350 F(when you put wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan. Fry them until light brown. Place the cooked lotus roots onto the sheet pan(remove some oil). Set aside.

6. Place 8 yubuchobaps onto a serving plate.

7. Serve them with decorations.
