Rice Croquettes

….Many people mistakenly believe that this food originated in France, but it can actually be traced back all the way to the early Roman Empire. Isn’t it interesting? It is served as a side dish, a snack, or fast food worldwide. A croquette is a small patty made from meat, potatoes, or vegetables. These ingredients are mixed together, then coated with breadcrumbs and deep-fried to create a golden, crunchy outer shell.

I made this dish for my grandson, Siwoo, last week. I chose steamed rice, broccoli, potatoes, prosciutto, mozzarella, and corn kernels as ingredients. I made it enjoyable for him by putting his favorite broccoli inside, so he could have fun while eating. The potatoes made it easy to bind all the ingredients together. However, Siwoo’s taste is changing as he grows. Now he doesn’t like broccoli… Well, today Siwoo didn’t eat the hidden broccoli again. Instead, my husband enjoyed the rice croquette more. Still, it seems like there is no end to the love for our grandson!

Servings: 4

Time: 45 minutes

Ingredients:

  • 2 cups steamed rice
  • 450 g potatoes, boiled and mashed
  • 2/3 cup corn kernels, boiled
  • 3 pieces of prosciutto, pan-fried and chopped
  • Broccoli, to taste, blanched and cut into small pieces
  • Mozzarella, to taste
  • Sea salt, to taste
  • 2 eggs, beaten
  • 2 tbsp potato starch
  • 1 tbsp flour
  • 2 cups Panko (or breadcrumbs)
  • Canola oil for frying

Cooking Instructions:

  1. Heat a pot over medium-high heat and add 3 cups of water to boil. Once it starts boiling, blanch the broccoli for 20 seconds and then drain it using a strainer. Set it aside.”

2. Heat a pot over medium-high heat and add 4 cups of water, potatoes(cut into small pieces), and 1/2 tsp sea salt to the pot. Boil them for 8 minutes until they are cooked.

3. After 8 minutes, remove the potatoes with a strainer. Mash the potatoes with a potato masher and set them aside.

4. Heat a pan over medium-low heat and grill the prosciutto until it’s crispy. Chop the prosciutto into small pieces and set them aside.

5. Put the steamed rice and some sea salt on a tray and mix gently.”

6. Add the mashed potatoes, corn kernels (cook them in the microwave for 1 minute), and prosciutto to the tray.

7. Form a rice mixture ball with both hands and place some broccoli and mozzarella inside.

8. Coat the rice balls well with the potato starch and flour. Repeat this process with the rest of the rice balls.

9. Beat the egg, Mirin, and a pinch of sea salt in a bowl. Dip each rice ball in the beaten egg. Coat the rice ball with the panko. Transfer it onto another tray.

10. Heat a pan over medium-high heat and add the canola oil into the pan. Heat the oil to 350 degrees Fahrenheit (when you put a wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan. Put the croquettes into the pan and fry them until golden brown.

11. Serve it hot.
