Rice Pot with Shepherd’s Purse, Octopus, & Whelk meat

….Shepherd’s purse is a Korean vegetable that announces the approach of spring. It’s a winter annual broadleaf weed, but it may grow all year in cool coastal areas of California. It grows agricultural land and other disturbed areas. The plant is most conspicuous in the spring and is distinguished for its flat heart-shaped green fruits that are born along the inflorescent stalks. It has strong scent full of spring that enhances our appetite in spring time. When the rice pot is ready, the spring scent fills the kitchen. We have a happy spring today, and it’s the taste we expected. We greet the warming spring with a big smile. I couldn’t get fresh shepherd’s purse, so I added parboiled shepherd’s purse. Rice pot is always delicious and make it easy. I cook rice pot often and I change the ingredients seasonally. Today, I failed to control the heat, so I got crispy rice crust on the bottom of the pot. It’s delicious, even the crispy rice crust…..

Servings: 3–4

Time: 40 minutes plus 30 minutes for soaking rice with strainer after cleaning with cold water

Ingredients:

  1. 2 cups white rice, cleaned and shift with a strainer for 30 minutes
  2. 400 ml first soup(katsuobushi broth)
  3. 200 g octopus, parboiled and sliced thinly
  4. 180 g whelk meat, cut into half
  5. 180 g shepherd’s purse, parboiled and cut into small
  6. 1 tbsp Mirin
  7. 1 tbsp gukganjang
  8. 2 tbsp sesame oil

Cooking Instructions:

  1. Heat a pot with medium heat and add 1 tbsp sesame oil into the pot.

2. Add the white rice into the pot to stir fry them for 1 minute.

3. Add the katsuobushi broth into the pot and add the gukganjang, Mirin, and 1 tbsp sesame oil into the pot to boil until it starts boiling.

4. When the edge of the pot starts to boil, turn down to very low heat for 15 minutes with a lid.

5. After 15 minutes, put the whelk meat on top of the white rice.

6. Keep boiling them for 5 minutes with the lid. After 5 minutes, put the octopus and shepherd’s purse on top of the whelk meat.

7. Turn off the heat. Leave the pot 10 minutes with the lid.

8. After 10 minutes, add the garlic chips onto the top of the rice pot.

9. Before serving, mix the rice pot lightly with a spatula and serve it.
