Roll Bread
….A friend I met for the first time in awhile gave me a small gift again, which were two pieces of bread dough. Her daughter is good at baking and made it for me. It was an unexpected warmth. Even a small thing can show you how much love there is. Rising is the most dramatic physical change a dough undergoes on account of yeast activity. In bread baking, the word proofing most commonly refers to the final rise the dough undergoes, which takes place after being shaped into a loaf, and before it is baked. Why not make my dough really warm so it’ll proof faster and I can have bread sooner? Time passed quickly as I worried while comparing sizes. I needed 5 hours for it to rise twice the size. It’s worth it finally. If you live in a home where you can control the temperature of the room, set your thermostat to 75 degrees while baking bread. It’s difficult to perfect bread fermentation but I had fun.

Time: 1 hour plus 5 hours for fermenting the dough(2nd rising)
Ingredients:
For dough:
- 1 tbsp yeast
- 1 cup water
- 3 tbsp sugar
- 1/2 tbsp sea salt
- 1/3 cup olive oil
- 3 cups flour
….all mixed after 30 minutes add 1/4 cup flour(1st rising) (I got this dough from my friend).
For toppings:
- 600 g potato, peeled and cut into 3–4 pieces
- 200 g broccolini, parboiled
- 200 g mozzarella cheese
- 8 pieces sliced ham
- Swiss cheese to taste, julienned
- Cheddar cheese to taste, julienned
- 2 egg yolks
- 2 tbsp milk
- 2 tsp sea salt
Cooking Instructions:
- Place the dough in a covered bowl at room temperature 4–6 hours(the dough will double in size).
2. Meanwhile, heat a pot with medium high heat and add 5 cup water and 1 tsp sea salt to boil. Parboil the broccolini into the pot for 1 minute. Sift it with a strainer and set aside.
3. Heat a pot with medium high heat and 4 cups water, 1 tsp sea salt, and potatoes into the pot to boil for 7–8 minutes. Sift them with a strainer.
4. Mash the boiled potatoes with a masher and set aside.
5. Julienne the Swiss cheese and cheddar cheese into a tray.
6. After 4–5 hours the dough will double.
7. Put the dough onto a counter and shape the dough into a square gently.
8. Spread the potato on top of the dough and sprinkle the mozzarella cheese on top of the potato.
9. Place the sliced ham on top of the mozzarella.
10. Place the parboiled broccolini, Swiss cheese, and cheddar on top of the sliced ham.
11. Roll it together gently.
12. Cut into 2 inches and place them onto a baking tray. Brush egg mixture(egg + milk) on top of the rolls.
13. Preheat the oven to 392 F. Cook in a preheated oven about 25 minutes(put boiled water under the tray).
14. After 25 minutes, turn off the oven heat and remove the tray onto a counter.
15. Serve it.
