Seasoned Acorn Jelly Salad(Dotorimuk-muchim)
….Dotorimuk is made from acorns. ANNE and JOHN like the Dotorimuk. So, I’d like to try making Dotorimuk, but it’s a lot of effort to make acorn jelly powder from scratch. But luckily the powder can be found easily at any Korean grocery store. I don’t know yet which one is the best quality powder. Last week, my sister sent me some acorn powder from Korea. It’s first time to make arcorn jelly today. It’s super easy to make it. According to a magazine, acorns were traditional food of many indigenous peoples of North America and served an especially important role for Californian Native Americans. Isn’t it interesting? You can use the same ingredient to make multiple different recipes depending on the culture.

Time: 30 minutes plus 4 hours for soaking acorn powder with cold water and cooling down acorn jelly
Ingredients:
For arcon jelly:
- 1 cup acorn powder
- 5 cup water
- 1 ts sea salt
- 1 Ts perilla oil
For salad:
- 1 Pack of acorn jelly, cut into a bite size
- 1/2 cucumber, sliced
- 1/2 cup radish sprout
- 1/2 cup crown daisy, cut into small size
- 1 Ts sugar
- 2 Ts chili pepper
- 4 Ts soy sauce
- 2 Ts jalapeño, minced
- 2 Ts vinegar(or 3 Ts fresh lemon juice)
- 2 Ts toasted sesame seeds
- 1 Ts garlic, minced
- 2 Ts green onion, minced
- 2 Ts sesame oil(or 1Ts perilla oil)
Cooking Instructions:
- Put the acorn powder into a pot and add the water into the pot to mix well. Set aside for 30 minutes(soak acorn powder in water).
2. After 30 minutes, heat the pot with high heat and boil it to stir well so that it doesn’t stick on the bottom of the pot. Add the sea salt into the pot.
3. After boil it, heat down the pot to low heat and add the perilla oil into the pot to keep stirring it for 15–20 minutes until become like porridge.
4. Turn off the heat and leave it for 1 minute with a lid.
5. Pour the acorn jelly into a tray and cool down for 3–4 hours with a lid.
6. After 3–4 hours, cut the acorn jelly and set aside.
7. Mix the soy sauce, sugar, vinegar, jalapeño, toasted sesame seeds, green onion, garlic, sesame oil and chili powder into a bowl well evenly. Set aside.
8. Serve it with vegetables and sauce.
