Simple Sautéed Celery Root(Celeriac)
….Have you ever seen a celery root before? It’s one of the root vegetables that can be easily found in the market where I live. This recipe is for simple sautéed celery root with garlic and herbs. It’s an easy and delicious way to cook celery root, and goes great with so many meals. Celery root looks like a roundish bulb approximately the size of a grapefruit. It tastes mild and has been described as a slightly sweeter celery flavor than the celery stalks we are used to eating. This vegetable is available to buy year around but if you were to grow it in your garden, it would be ready to harvest in the fall. Celery root is a little intimidating to look at but it’s actually quite simple to prepare. You need a sharp knife to peel it because the bumpy surface makes using a peeler very hard. Slice the top and bottom so that you can stand it on a cutting board. Using your knife, make sure you take off all the slightly hairy brown peel. The inside of the root is cream colored so don’t stop peeling until all the brown peel is gone. When I was peeling the surface, I was rubbing some lemon onto the surface of the celery root because the lemon juice prevented color changing. This recipe is from healthyseasonalrecipe.com.

Ingredients:
- 2 celery roots, peeled(600 g)and diced into 1/2 inch
- 1 cup chicken broth
- 1 tbsp garlic, minced
- 1–2 tbsp thyme, minced
- 3 tbsp avocado oil
- sea salt to taste
- black pepper to taste
Cooking Instructions:
- Clean the celery root with running water. Peel the celery root with a knife and dice them.
2. Heat a pan with medium high heat and add the avocado oil and celery root to sauté them until light brown.
3. Add the garlic into the pan to sauté for 30 seconds.
4. Add the 1 cup chicken broth into the pan to keep stirring them for 5 minutes with a lid(the liquid in the pan will be evaporated).
5. After 5 minutes, keep stirring them for 2 minutes without the lid until the liquid is gone(check for softness with a fork).
6. Add the thyme, sea salt, and black pepper into the pan.
7. Serve it as a side dish.
