Soba
When my daughters were young, they didn’t like the cold broth. They used to eat soba with udon soup instead of the cold soup. What recipe is the most delicious recipe for everyone? The best recipe is one that my daughters love. It doesn’t need any specific recipe. I used special noodles that were gifted to me, and they taste clean and chewy today. Thank you for the gift. Soba is one of JOHN and my favorite summer dishes. JOHN said “Yeah! it’s so good!” hahaha…. he loves soba.

Time: 40 minutes
Ingredients:
- 200 g dried noodles
- 2/3 cup soba noodle soup base
- fresh wasabi to taste
- 1/2 cup radish, ground
- green onion to taste, minced
- 1/2 cup crown daisy, cut into small size
- 1/2 cup cucumber, julienned
- 1/3 cup radish sprouts
- nori seaweed to taste
Cooking Instructions:
- Slice the cucumber, crown daisy, and radish sprouts into a tray. Set aside.
2. Grind the radish with a grinder and shower the ground radish with a water quickly(removes the spiciness of radish). Set aside.
3. Grind the fresh wasabi with a grinder and set aside.
4. Heat a pot with medium heat and add 4 cup water into the pot to boil. Add the dried noodles to boil it for 4 minutes and wash the noddles into cold water for several times quickly. Sift the noodles with a strainer.
5. Serve it with soba soup, and vegetables for garnish.
