Spicy Cucumber and Fuyu Persimmon Side Dish

….My family loves Fuyu persimmons in autumn. They’re sweet and crisp. I’m going to share a super simple recipe. It’s a spicy Korean cucumber side dish with Fuyu persimmon. Many Koreans have their own version of seasoned cucumber recipe. You’ll find many variations from family to family. This one adds some Fuyu persimmon. If you have a Fuyu persimmon, you can make this delicious side dish in just a few minutes. One tip for this recipe is to make it and mix it just before serving, which will keep it from getting watery. This recipe is from @booth108kwon.

Ingredients:

  1. 1 1/2 cup Fuyu persimmon, peeled and sliced
  2. 1 1/2 cup cucumber, peeled a little and sliced
  3. 1/2 cup chives, cut into 1 inch
  4. 1 Ts sugar
  5. 1 Ts chili pepper powder
  6. 1 Ts vinegar
  7. 1/2 ts sea salt
  8. 1/2 ts tuna sauce
  9. 1 ts toasted sesame seeds

Cooking Instructions:

  1. Mix the sugar, chili pepper powder, vinegar, sea salt and tuna sauce into a bowl well.

2. Mix all of ingredients just before serving with toasted sesame seeds.

3. Serve it.
