Spinach Feta Spanakopita

….Why is it so difficult to buy feta cheese these days? After going to the market several times, I finally managed to buy some today. I prepared Spanakopita with plenty of spinach as a snack for my husband. Spinach is a great ingredient for him, so I carefully thought about various ways to make it. Eating spinach may benefit eye health, reduce oxidative stress, help prevent cancer, and reduce blood pressure levels.

When you bite into the crispy filo pastry, the satisfying crunch and the hearty filling create a harmonious Greek spinach pie. It’s a fun pie rolled into a triangle shape, easy to eat and make. But when my husband takes a bite, the pie pieces crumble everywhere… If that can’t be avoided, we enjoy it. This time of year, winter spinach starts appearing in the market. It’s called Pohangcho! It has a delightful sweetness to its taste. This recipe is @recipe_tin.

Time: 1 hour

Ingredients:

  1. 300 g spinach leaves, washed, dried, then chopped into 2.5 cm pieces
  2. 1/2 tsp sea salt
  3. 175 g Greek feta crumbled
  4. 1/2 cup Greek yoghurt

5. 2 green onions finely chopped

6. 1/2 tsp lemon zest

7. 1/2 tbsp lemon juice

8. 2 garlic cloves finely chopped

9. 1/2 tsp nutmeg freshly grated

10. 1/4 tsp black pepper

11. 1/4 tsp sea salt

12. 1/4 tsp cayenne pepper

13. 1 egg

14. 2 tbsp mint finely chopped

15. 1 tbsp dll finely chopped

16. 5 sheets filo pastry, thawed

17. 5 tbsp unsalted butter, melted

18. some Parmesan cheese, grated

19. 1/2 tsp black sesame seeds

Cooking Instructions:

  1. Toss the chopped spinach with 1/2 tsp of sea salt and let it sit for 10 minutes.

2. Squeeze out the excess liquid as best as you can using a cheesecloth.

3. Place the spinach in a large bowl.

4. Add the feta cheese, yogurt, green onions, lemon zest, garlic, nutmeg, black pepper, sea salt, cayenne pepper, lemon juice, mint, dill, and egg to the bowl. Mix them well.

5. Place a sheet of filo pastry on a work surface or working tray.

6. Brush melted butter onto the filo sheet, then sprinkle Parmesan cheese on top of the butter.

7. Place another sheet of filo pastry on top of the cheese. Exclude the cheese, and just brush butter onto the filo pastry, then stack three more sheets on top.

8. Divide the stacked filo pastry into 5 pieces.

9. Place one piece of the stacked filo pastry on a board and add 1.5 tbsp of filling to one corner of the filo pastry.

10. Fold the filling into a triangle shape using the pastry and roll it up. If you apply a little butter to the connecting part, it will help with adhesion.

11. Place the pie on a baking tray and brush some butter on the surface. Sprinkle some black sesame seeds on top of it. Preheat the oven to 430°F.

12. Cook in a preheated oven for about 15–17 minutes, or until the surface is a deep golden brown.

13. After 17 minutes, turn off the oven and remove the tray to the countertop.

14. Serve it hot or at room temperature as a snack or appetizer.
