Spinach & Ricotta Rotolo
….Yesterday, I got special tomato sauce that my friend made from scratch. I was very happy as soon as I got it…. She made it with fresh tomatoes from her backyard. Thank you so much!…. Even a small thing can show you how much love there is. I ate a spoonful when I got home…WOW! It’s so fresh and delicious! I wanted to remember it as something special. Rotolo pasta! Rotolo is definitely one of the more unusual pasta dishes that you’ve seen. This pasta dish is a filling that’s rolled up in lasagna sheets. It’s so tasty, but quite technical and time consuming to make. This spinach rotolo is filled with health benefits from green vegetables like spinach. I didn’t wonder about the result while making it, because the tomato sauce is fantastic. Moreover, the process of making it was very simple. My husband also gave feedback that it tasted very neat and light. I left a recipe for my friend to remember….
Servings: 5–6
Time: 1 hour 30 minutes
Ingredients:
- 8–10 fresh lasagna sheets
- 1 cup mozzarella cheese shredded(for topping)
- 1 tbsp olive oil
- 4 cups tomato sauce(this is special sauce from my friend), warmed up
- 1/2 cup basil
For filling:
- 500 g fresh spinach, parboiled and sifted with strainer
- 500 g ricotta cheese
- 1 cup mozzarella cheese shredded
- 1 egg
- 1/2 cup parmesan cheese
- 2/3 tbsp garlic, minced
- 1/4 fresh nutmeg, grated
- 3/4 tsp sea salt
- 1/2 tsp black pepper
Cooking Instructions:
- Heat a pot with medium high heat and add 6 cups water into the pot to boil. Start boiling the water, parboil the spinach into the pot for 1 minutes.
2. Turn off the heat and sift the spinach with a strainer. Set aside.
3. Put the parboiled spinach, ricotta cheese, mozzarella, parmesan, egg, garlic, fresh nutmeg, sea salt, and black pepper into a bowl to mix well evenly.
4. Pour 3 cups warmed tomato sauce into a baking pan and add some basil into the sauce.
6. Place 2 tbsp mixed filling on each sheet(smear water on end, but I didn’t). Roll up and cut into half.
7. Stand them upright into the tomato sauce.
8. Drizzle over 1 cup tomato sauce.
9. Preheat the oven to 350 F and cover it with foil loosely.
10. Cook in a preheated oven about 30–35 minutes.
11. After 35 minutes, remove the foil. Drizzle with olive oil and 1 cup mozzarella cheese on top of the Rotolo.
12. Cook in a preheated oven about 15 minutes until bubbling.
13. After 15 minutes, Turn off the heat and remove the baking pan onto a counter and serve it hot with individual plates.
