Spinach side dish(Sigeumchi-namul)

….Sigeumchi-namul is a Korean side dish made of blanched spinach seasoned with soy sauce, garlic, and toasted sesame oil. The spinach is only slightly cooked, soft, and tasty. It’s a very popular and common side dish among Koreans. In this recipe you can replace spinach with soy bean sprouts or kale or experiment with something new if you want. Also I used this sigeumchi-namul for kimbab and japchae.

Serving: 4

Time: 20 minutes

Ingredients:

  1. 1 lb spinach, clean
  2. 2 Ts green onion, minced
  3. 1 Ts garlic, minced
  4. 1 Ts toasted sesame seeds
  5. 1/2 Ts sesame oil
  6. 1 Ts mixed sauce(gukganjang: fish sauce: tuna sauce=1:1:1)

Cooking Instructions:

  1. Heat a pot with medium high heat and pour water to boil it. Add the cleaned spinach into the pot to parboil it for 1–2 minutes.

2. Turn off the heat and rinse the spinach into cold water. Sift the spinach and squeeze the spinach a little bit. Set aside.

3. Mix the parboiled spinach, mixed sauce, green onion, sesame oil, garlic, and toasted sesame seeds into a bowl well softly.

4. Serve it.
