Ssambap with Lettuce and Kimchi

….This recipe is very easy to make with stir-fried beef chili paste(bokkeumgochujang) and some leftover meat. Stir-fried beef chili paste is a precious dish in Korea. It’s one of the must-haves on the table for my husband. I added the bokkeumgochujang on top of the wrap today. Ssam means wrapped and bap means rice, so you can imagine ssambap means wrapped rice. When I lived in Korea a long time ago, my mother-in-law used to make stir-fried beef chili paste and sent it to my brother-in-law’s family in the United States. They used to fill their yearning for Korean food at that time. It’s a precious present back in those days. Food is a precious expression of our love. It’s a special dish without any side dishes, because ssambap has a tiny bokkemgochujang on top of the wrap. Frankly, I put some bulgogi inside the ssambap, so it couldn’t be better….haha.

Servings: 3

Time: 50 minutes

Ingredients:

  1. 12 kimchi leaves, cleaned
  2. 1 butter lettuce, cleaned
  3. 400 g beef ribeye, sliced thinly
  4. bokkeumgochujang(stir-frid beef chili paste) to taste
  5. 3–4 cup steamed rice
  6. sesame seeds to taste
  7. black sesame seeds to taste
  8. perilla oil to taste
  9. 1/2 tsp muscovado

For Bulgogi sauce:

  1. 2 1/4 tbsp soy sauce
  2. 1 1/2 tbsp muscovado
  3. 1 tbsp garlic, minced
  4. 1 1/3 tbsp Mirin
  5. 1 1/3 tbsp plum extract
  6. 1 tbsp sesame seeds
  7. black pepper to taste
  8. 1 tbsp sesame oil

….all mixed

Cooking Instructions:

  1. Remove blood from the meat with paper towels.

2. Put the garlic, Mirin, plum extract, soy sauce, muscovado, sesame seeds, sesame oil, and black pepper into a bowl to mix well.

3. Marinade the beef with the mixed sauce in a bowl and store in a refrigerator for 1 hour.

4. Cut the kimchi into half(use only leaves) and wash the kimchi with cold water 2 times.

5. Squeeze the kimchi lightly and set aside with strainer.

6. Put the kimchi into a tray and add the muscovado, perilla oil, and sesame seeds into the kimchi to mix well. Set aside.

7. Clean the butter lettuce with cold water and set aside with a strainer.

8. Put the steamed rice into a bowl and add some sesame seeds and perilla oil into the bowl to mix well lightly. Set aside.

9. Heat a pan with medium high heat and add some sesame oil into the pan. Put the marinated beef into the pan to stir- fry them until cooked.

10. Place one kimchi leaf on working surface.

11. Place 1tbsp marinated rice in the middle and add some bulgogi on top of the rice.

12. Pull up the kimchi to cover bulgogi and keep rolling(firmly). Repeat with the remaining ingredients.

13. Place the kimchi roll onto a serving plate.

14. Add some paprika powder, bokkeumgochujang(stir-fried beef chili paste), and sesame seeds on top of the kimchi roll.

15. Place a butter lettuce onto the serving plate. Put 1 tbsp marinated rice onto the middle of the butter lettuce.

16. Put some bulgogi on top of the rice and add some bokkeumgochujang on top of the bulgogi. Repeat with the remaining ingredients.

16. Serve it.
