Steamed Amberjack with Soy Sauce

….Steamed dishes are made by slowly braising or steaming seasoned fish and vegetables in a sauce. JOHN and LACEY love fish dishes no matter how I cook. This recipe is very soft and mild, so it’s good to eat when you are not sure what you want to eat.

Serving: 4

Time: 40 min plus 30 minutes for marinading fish

Ingredients:

  1. 1 lb amberjack filets(or red snapper, rockfish)
  2. 10 chili pepper
  3. 1/4 cup ginger, sliced
  4. 5 garlic, sliced
  5. 3 stems green onion, julienned
  6. 1 cup brown beech mushroom(this is optional)
  7. 3 Ts sake
  8. 2 Ts fresh lemon juice
  9. 1/2 ts sea salt
  10. 5 Ts avocado oil
  11. 4 Ts soy sauce
  12. 2 Ts water
  13. 1 Ts Mirin
  14. 1/4 ts HONDASHI
  15. 1/2 ts sugar
  16. black pepper

Cooking Instructions:

  1. Marinade the amberjack with 1Ts sake, fresh lemon juice, sea salt and a little bit of black pepper for 30 minutes.

2. Put the soy sauce, water, 2 Ts sake, Mirin, Hondashi, sugar and a little bit of black pepper into a bowl.

3. After 30 minutes, heat up the steam pot with medium high heat and when steam rises in the steamer, add the marinaded amber jack into the steam pot for 7 minutes with a lid.

4. After 7 minutes, turn off the heat and take out the amberjack into a tray.

5. Put the sliced green onion and the sliced ginger into the top of the steamed amberjack.

6. Boil the 3 Ts avocado oil and pour the hot avocado oil into the green onion and the ginger with the steamed amberjack.

7. Take out the ginger.

8. Heat up a pan with medium heat and add 2 Ts avocado oil, green onion, ginger and garlic to stir fry them for 2 minutes.

9. Add the mushroom and chili pepper into the pan to keep stirring them for 2 more minutes.

10. Take out the ginger from the pan.

10. Put the mixed sauce into the pan to simmer them for 2 minutes.

11. Turn off the heat and pour the sauce into the steamed amberjack with a serving plate.

12. Serve it.
