Steamed Red Snapper with Soy Sauce
….This recipe is my one of signature dishes. Steamed dishes are made by slowly braising or steaming seasoned fish and vegetables in a sauce. I have a sweet memory. When my son-in-law’s parents visited my house, I served this dish on the table at dinner. They loved this soft and mild fish, so it’s good to eat when you are not sure what you want to eat. When inviting an honored guest, I always struggle with menu decisions. It is one of the menus that has been of interest to anyone regardless of age. As for the type of fish, it is good to choose the white fish you like. Personally, I like the softness of sea bream, but my family prefers the sweetness of amber jack. Frankly, I learned this recipe with a whole fish at that time, but cooking with pieces of fish is much better to make and eat than whole fish.

Time: 40 min plus 30 minutes for marinating fish
Ingredients:
- 1 lb red snapper fillet, pat dry
- 3 dried chili pepper, cut into 1/2 inch
- 1/4 cup ginger, sliced
- 5 garlic, sliced
- 2 stems green onion, julienned
- 3 tbsp sake
- 2 tbsp lemon juice
- 1/2 tsp sea salt
- 5 tbsp avocado oil
- 4 tbsp soy sauce
- 2 tbsp water
- 1 tbsp Mirin
- 1/4 tsp HONDASHI
- 1/2 tsp muscovado
- white pepper to taste
Cooking Instructions:
- Marinate the red snapper with 1 tbsp sake, lemon juice, sea salt, and a little bit of white pepper for 30 minutes.
2. Put the soy sauce, water, 2 tbsp sake, Mirin, Hondashi, muscovado, and a little bit of white pepper into a bowl.
3. After 30 minutes, heat up the steam pot with medium high heat and when steam rises in the steamer, add the marinated red snapper into the steam pot for 7 minutes with a lid.
4. After 7 minutes, turn off the heat and take out the red snapper into a tray.
5. Put the sliced green onion and sliced ginger onto the top of the steamed red snapper.
6. Boil the 3 tbsp avocado oil and pour the hot avocado oil into the green onion and the ginger with the steamed red snapper.
7. Heat up a pan with medium heat and add 2 tbsp avocado oil, green onion, ginger, and garlic into the pan to stir fry them for 2 minutes.
8. Put the dried red chili pepper and mixed soy sauce into the pan to simmer them for 2 minutes.
8. Turn off the heat and take out the ginger from the pan.
9. Put the steamed fish onto a serving plate and pour the soy sauce into the steamed red pepper.
10. Serve it hot.
