Stir-fried Asian Chives and Beef with Chinese Steamed Bun(Boochu-Japchae & Kkotbbang)

….When my daughters were young, they didn’t like vegetables. I made this dish with lots of beef in it and added only Asian chives. It’s a recipe my daughters have loved since they were little to now. Also this recipe is the one I’ve been making for my family for years and years. This is a simple dish that most people love. Sometimes it has too moisture, but they don’t care. They dip the bun into the sauce. One plate is enough for one meal. Today, I made this dish for my husband, so I added lots of Asian chives in it. Be careful with Asian chives that are not tender sometimes, as they are uncomfortable to eat. When steam rises from the steamer, why do we eat it so quickly even if it is hot?

Servings: 3–4

Time: 40 minutes

Ingredients:

  1. 1 lb beef short rib, julienned
  2. 4 cup Asian chives, cut into 2 inches
  3. 1/4 ts salt
  4. black pepper to taste
  5. 2 ts garlic, minced
  6. 2 Ts green onion, minced
  7. 1 Ts onion, minced
  8. 1 ts ginger
  9. 3 Ts avocado oil
  10. 5 dried chili pepper
  11. 10 pieces Chinese bun, steamed

For sauce:

  1. 1 ts muscovado
  2. 2 ts oyster sauce
  3. 1 ts hoisin sauce
  4. 2 ts Mat-Gan-Jang
  5. 2 ts sesame oil

Cooking Instructions:

  1. Marinate the beef short ribs with salt and black pepper in a bowl for 10 minutes.

2. Mix the sauce, put the muscovado, oyster sauce, hoisin sauce, Mat-Gan-Jang, and sesame oil into a bowl well. Set aside.

3. After 10 minutes, heat a pan with medium high heat and add the avocado oil into the pan. Add the ginger, garlic, dried chili pepper, green onion, and onion into the pan to stir them for 1minute.

4. Add the marinated beef into the pan to stir them until cooked beef(70% cooked).

5. Add the mixed sauce into the pan to stir them until beef is cooked.

6. Add the stem parts of the chives into the pan to stir them for 30 seconds.

7. Add the leaves parts of the chives into the pan to keep stirring them 20–30 seconds. Turn off the heat.

8. Heat a steamer with medium high heat and put the Chinese bun into the steamer for 5 minutes. Turn off the heat.

9. Serve the stir-fried Asian chives with Chinese steamed bun.
