Stir-Fried Asparagus with Scallops and Mushroom

…While asparagus is fortunately usually found year-round in grocery stores, like most produce, it does have a peak season. The best asparagus is found during spring, with the season typically starting around late February and going until June. However, the peak months are in April and May. I always try my best to use seasonally and locally grown fresh produce whenever possible. And now that spring is finally here, there is one very special vegetable I can’t wait to find at the farmers market. No matter which main dish I pair it with, asparagus always tastes great by itself. This recipe, made with ingredients from my refrigerator at home, is even more delicious than I thought. It’s an easy and quick recipe with great texture from the asparagus. The gravy from the scallops adds flavor, and the chewiness of the shiitake mushrooms is also a great addition to the dish. My husband couldn’t get enough of the crispy asparagus — he raved about its texture and devoured the whole dish in the blink of an eye.

Servings: 2–3

Time: 30 minutes

Ingredients:

  1. 10 asparagus, peeled and cut into 2 inches
  2. 15 scallops, sliced into half
  3. 3–4 shiitake mushrooms, sliced into small
  4. 7 garlic cloves, sliced
  5. 8 green onions, cut into 1 inch(only white part)
  6. 2 tbsp avocado oil
  7. 1 tbsp sesame oil
  8. 1 tbsp sake
  9. 1 tbsp Mat-Gan-Jang
  10. 1/2 tbsp oyster sauce
  11. 1 tsp chili pepper, crushed
  12. black pepper to taste

Cooking Instructions:

  1. Mix the Mat-Gan-Jang, oyster sauce, and black pepper into a small bowl well. Set aside.

2. Heat a pan with medium heat and add the avocado oil into the pan.

3. Add the garlic and green onion into the pan to stir them for 3–5 minutes until the flavor comes out.

4. Heat up with medium high heat and add the shiitake mushrooms and asparagus into the pan to stir them until half cooked.

5. Add the scallops, sake and the mixed soy sauce into the pan to stir them quickly.

6. Sprinkle the crushed chili pepper and sesame oil into the pan. Turn off the heat.

7. Serve it.
