Stir-Fried Asparagus with Shiitake mushrooms

….Happy Spring! A lot of fresh asparagus can be found at a farmer’s market. It looked very tender, so I put a bunch of asparagus in my grocery cart. Fresh ingredients are delicious no matter what you do. I tried a vegetable dish with some fresh shiitake mushrooms. This quick dish pairs tender asparagus with meaty shiitake mushrooms for a satisfying vegetable stir-fry. It’s a dish that lets you feel Spring. This recipe is from William Sonoma.

Servings: 4–6

Time: 30 minutes

Ingredients:

  1. 1 lb asparagus, peeled, cut in three pieces, and tough ends snapped off
  2. 3 Ts avocado oil
  3. 1 garlic clove, minced
  4. 1 ts fresh ginger, grated
  5. 3 cup shiitake mushroom, sliced thinly
  6. 1/4 cup sake
  7. 1/4 cup chicken broth
  8. 1 1/2 Ts Mat-Gan-Jang(or 1 1/2 Ts soy sauce + 1 ts sugar)
  9. 2 ts sesame seeds

Cooking Instructions:

  1. Heat a pan with medium heat and add avocado oil into the pan. Add the garlic and fresh ginger to stir them for 30 seconds.

2. Add the shiitake mushrooms into the pan to stir fry until lightly brown for 2 minutes.

3. Add the asparagus into the pan to stir fry them until bright green for 3 minutes.

4. Add the sake, chicken broth, and Mat-Gan-Jang into the pan and cook until the liquid is reduced to a sauce-like consistency. All the vegetables are tender for 2–3 minutes and sprinkle the sesame seeds.

5. Transfer to a warmed serving dish and serve immediately.
