Stir-fried Dried Shrimp
….This dish is a popular side dish from my mother’s generation in Korea. Also it’s one of the most common basic side dishes, called mitbanchan. Basic side dishes are made to last long and served with every meal. This kind of side dish is sweet, savory, sticky, and crunchy. Dried shrimp are high in nutrition, so my mother encouraged me to eat more of this dish. They are an excellent source of calcium, protein, omega 3 fat when you eat the shells as well. Some may worry that shrimp have high cholesterol but there are studies that show shrimp raises the good cholesterol(HDL) even more, so it’s not bad at all. I didn’t like them when I was little, but now I made this dish for my husband. He loves it so much. My husband puts down chopsticks only once he sees the bottom of the bowl…..Korean side dishes are great because you can make a large amount and eat it over time which means you end up saving time overall. Another good thing, It’s a great dish for kids!!

Time: 30 minutes
Ingredients:
- 100–120 g dried shrimp, sifted to remove some scraps with a strainer
- 3 tbsp Mirin
- 3 green onions, minced
- 1 tbsp sesame seeds
- 1 tsp sesame oil
- 1 cup walnut, pumpkin seeds, and pine nuts(this is optional)
For sauce:
- 1/2 tbsp sugar
- 2 tbsp Mat-Gan-Jang
- 2 tbsp chili oil
- 3 tbsp rice syrup
- 1 tbsp avocado oil
Cooking Instructions:
- Sift the dried shrimp with a strainer to remove some scraps into a tray. Set aside.
2. Put the sugar, Mat-Gan-Jang, chili oil, rice syrup, and avocado oil into a bowl to mix well.
3. Heat a pan with medium low heat and add the walnut, pumpkin seeds, and pine nuts into the pan to stir them until light brown.
4. Heat a pan with medium heat and add the dried shrimp and Mirin into the pan to stir it 1–2 minutes quickly(remove some fishy flavor and coat the shrimp outside).
5. Place the cooked shrimp onto a tray.
6. Heat the same pan with medium heat and add the mixed sauce into the pan to boil.
7. Add the cooked shrimp and nuts into the pan to stir fry them until a little browned and crispy.
8. Turn off the heat and add the green onion, sesame seeds, and sesame oil into the pan to mix them well.
9. Serve it as a side dish.
