Stir-Fried Garlic Scapes with Meat

….Whenever the seasons change, I always love to see the fresh, new ingredients available at the farmers’ market and the Korean grocery store. I love cooking with these ingredients, and I love eating them. Today’s recipe uses garlic scapes, called maneuljjong in Korean, which are well-known and popular in Korea. I found out they are becoming more popular in my neighborhood as well. That’s good news because they are so fresh and delicious. When they are in season in May and June, they are perfectly fresh and tender. This dish is sweet, chewy, crispy, and salty. I also added meat. When cooking with meat, it’s recommended to make smaller portions that can be consumed in one go rather than making a large amount. This reduces the inconvenience of having to reheat the solidified oil of the meat when storing it in the refrigerator. It’s a special dish that you can mix generously on top of rice and enjoy, perfect for spring.

Servings: 4–5

Time: 30 minutes

Ingredients:

  1. 4 cups (400 g) garlic scapes, cut into 1-inch pieces
  2. 250- 300 g beef short ribs, julienned
  3. 1 tbsp mirin
  4. 1 tbsp water
  5. 4 - 5 tbsp Mat-Gan-Jang
  6. sesame seeds to taste
  7. sesame oil to taste
  8. 2 tbsp avocado oil

For marinated beef short ribs:

  1. 1.5 tbsp soy sauce
  2. 1/2 tbsp garlic, minced
  3. 1 tbsp mirin
  4. 1/2 tbsp plum extract
  5. 1/2 tbsp sesame seeds
  6. 1 tbsp muscovado sugar
  7. black pepper to taste
  8. 1 tbsp green onion, minced
  9. 1/2 tbsp sesame oil

Cooking Instructions:

  1. Combine the soy sauce, muscovado sugar, plum extract, mirin, garlic, black pepper, green onion, sesame oil, and sesame seeds in a bowl and mix well. Marinate the beef short ribs in the mixed sauce.

2. Heat a pan over medium-high heat and add 1 tbsp avocado oil to it. Stir-fry the marinated beef short ribs until lightly cooked. Set aside.

3. Heat the same pan over medium-high heat and add 1 tbsp of avocado oil, then stir-fry the garlic scapes for 1 minute.

4. Reduce the heat to medium and add the Mat-Gan-Jang, water, and mirin to the pan. Stir-fry them for 2 minutes.

5. After 2 minutes, add the cooked beef short ribs to the pan. Stir fry them for 2–3 minutes until the garlic scapes are coated with soy sauce.

6. Sprinkle sesame seeds and sesame oil over it.

7. Serve it as a side dish or with steamed rice.
