Stir fried Zucchini with Beef, Mushrooms, and Rice Pancake(bukkumi)
….I still remember this dish. When I was little, my mother was busy making things in the kitchen. This dish is one of those. It is a labor-intensive dish, where each ingredient is prepared one by one, stir fried, and then mixed together. My mother learned this dish from my grandmother. Why was cooking so difficult for our ancestors? Was it because there was no refrigerator, so it was difficult to store ingredients? Anyway I was able to experience indirectly what my grandmother’s life would be like by making this dish. Even though this dish recipe was a familiar one for me, the process of making it was longer than I remember. And It has an interesting ingredient “bukkumi”. Bukkumi is a pan-fried rice cake made with sweet rice flour and white rice flour. It is a flat cake, and the chewy texture is fun. I wish you will think of someone you love as you get started on this recipe, because it’s like a trip to our past.

Ingredients:
1. 600g zucchini, took out seeds and sliced
2. 150 g oyster mushroom, poached and tore into small
3. 150 g alba mushroom, tore into small
4. 250 g beef New York strip steak, julienned
5. 2 tbsp Mat-Gan-Jang
6. 3 tbsp green onion, minced
7. 2 tbsp garlic, minced
8. 3 tbsp sesame oil
9. 2 tbsp sesame seeds
10. black pepper to taste
11. 1 cup white rice flour
12. 1 cup sweet rice flour
13. 8–9 tbsp hot water
14. 1 tbsp almond powder(or pine nut)
15. 2/3 tbsp muscovado(or sugar)

Cooking Instructions:
- Put the sliced zucchini into a tray and sprinkle 12 g sea salt(2% of the zucchini )onto the zucchini for 30 minutes(turn it over once).
2. Put the julienned beef onto a tray and put the Mat-Gan-Jang, 1 tbsp green onion, 1 tbsp garlic, 1 tbsp sesame oil, 1 tbsp sesame seeds, and black pepper into a small bowl. Pour the mixed sauce into the beef to mix well evenly and set aside.
3. Heat a pot with medium high heat and add 4 cups water into the pot to boil. Poach the oyster mushroom into the pot for 2 minutes and rinse them with cold water. Squeeze the mushroom with hands lightly and tear them into small pieces. Set aside.
4. After 30 minutes, sift the zucchini with cheese cloth and squeeze the moisture from the zucchini.
5. Put the sweet rice flour, white rice flour, and sea salt into a bowl and add the hot water into the bowl. Mix them well with spatula(it’s hot).
6. Roll out the dough thinly with a rolling pin.
7. Heat a pan with medium low heat and add a little avocado oil to pan fry the dough into the pan until light brown(if you pan fry too long, it will be hard).
8. Cut into small sizes and set aside.
9. Heat a pan with medium high heat and add some avocado oil into the pan.
10. Stir fry the zucchini quickly for 1–2 minutes until bright green.
11. Turn off the heat and take out the zucchini into a tray. Spread them out to cool down quickly.
12. Heat the same pan with medium high heat and add some avocado oil into the pan. Stir fry the alba mushroom, some garlic, some green onion, and sea salt quickly. Set aside.
13. Heat the pan with medium high heat and add some avocado oil into the pan. Stir fry the poached oyster mushroom, some garlic, some green onion, and sea salt quickly. Set aside.
14. Heat the pan with medium high heat and add some avocado oil into the pan. Add the marinated beef into the pan to stir them until the moisture is gone. Place all ingredients into a tray.
15. Put the remaining garlic, remaining green onion, 2/3 tbsp muscovado, 2 tbsp sesame oil, 1 tbsp sesame seeds, 1 tbsp almond powder, and black pepper into a small bowl to mix well.
16. Put all ingredients(beef, bukkumi, alba mushroom, oyster mushroom, zucchini)and the mixed sauce into a bowl and mix well softly.
17. Serve it.
