Stir-Fry Brussels Sprouts with Sausage & Sage

Brussels sprouts are a leaf vegetable. I called it “little green brains” when I first saw it. They look like mini cabbages but taste somewhat like broccoli. You may buy them either untrimmed or trimmed, and both keep well for at least one week in the fridge. Brussels Sprouts is one of my daughter LACEY’s favorite vegetables. Be careful not to overcook Brussels Sprouts. Too long on the stove and the sprouts will release a bitter taste. So do a quick sauté and add them to your favorite stir-fry side dish. This dish needs few ingredients- sausage, sage, and apple. The scrambled sausage is a great tip for combination. I love Brussels sprouts and it’s refreshing to get a healthy veggie. Servings: 4–5

Time: 30 minutes

Ingredients:

  1. 600 g Brussels sprouts, cleaned and parboiled for 5 minutes
  2. 2 sausages(mild sweet Italian sausage), removed skin
  3. 1/2 onion, diced
  4. sage to taste
  5. 1/2 apple, diced
  6. 2 tbsp avocado oil
  7. 1/2 tsp sea salt
  8. 2 tbsp Worcestershire sauce
  9. Parmigiano Reggiano cheese to taste

Cooking Instructions:

  1. Heat a pot with medium high heat and 5 cups water and sea salt into the pot to boil.

2. Parboil the Brussels sprouts into the pot for 5 minutes and sift the sprouts with a strainer. Set aside.

3. Heat a pan with medium high heat and add the avocado oil and sausage into the pan to stir them with a wood spatula(cut into chunks and fry).

4. Add the sage into the pan to keep stirring for 1–2 minutes.

5. Add the onion into the pan to keep stirring them for 2–3 minutes(until onion lightly golden)

6. Add the parboiled Brussels sprouts, apple, and Worcestershire sauce into the pan to keep stirring them for 1–2 minutes until seasoned.

7. Sprinkle some parmigiano Reggiano cheese on top of the gratin.

8. Serve it as a side dish.
