Sweet Potatoes Bake
….These potatoes are soft, sweet, and super delicious. Baked sweet potatoes are a common street food in Korea. It’s just baked in the wood fire pit. I still remember the smell on the street that spreads out the smell of the baking sweet potatoes during winter time. I have vivid memories of buying hot baked sweet potatoes in a paper bag and coming home to my family. On some long winter nights we’d take out a sweet potato, slice it and eat it raw like a snack. We all love baked sweet potatoes. I usually used to bake sweet potatoes just in the oven. Today, I baked sweet potatoes as another dish for our snack. I think this is the simple recipe I have ever cooked. It’s easy to make, chewy, and full of sweet potato flavor. Everyone knows sweet potato has a lots of vitamins and fiber. Time: 1 hour 10 minutes
Ingredients:
- 2.5 lb(4–5) sweet potatoes, sliced as even shaved as possible and skin on
- 2 tbsp unsalted butter, melted
- 2 garlic cloves, minced
- 2 tbsp olive oil, plus a little extra for brushing the skillet
- 3/4 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp rosemary leaves, chopped plus more for garnish
Cooking Instructions:
- Put the sliced sweet potatoes into a big bowl.
2. Add the melted butter, garlic, oregano, sea salt, black pepper, and olive oil into the big bowl and mix well.
3. Brush the skillet with a little olive oil.
4. Place the marinated sweet potatoes in circular pattern.
5. Preheat the oven to 350 F. Cook in a preheated oven about 30 minutes with a lid.
6. After 30 minutes, remove the skillet onto a counter. Preheat the oven to 430 F. Take off the lid and drizzle some olive oil onto the sweet potatoes.
7. Cook in a preheated oven about 20–25 minutes until tops are golden and a bit crispy without the lid.
8. After 25 minutes, remove the skillet onto a counter. Serve it with garnish.
