Sweetened Rice with Dried Fruits and Nuts(Yaksik)

…Yaksik is a kind of Korean rice cake made with sweet rice, jujubes, nuts, and dried cranberries. It’s a sweet, delicious treat that’s packed full of flavor and healthy ingredients. So yaksik is good for you. In retrospect, my sister always made the most delicious yaksik for me. She made it with steaming, mixing…through several processes. I especially remember the food and I miss my sister. The people I remember remain in my heart. I miss many friends I can’t meet due to COVID-19. I can only pray for them to be healthy wholeheartedly !!!! Today I made this dish as my husband’s snack. I simply did it all at once in an electric rice cooker. If I can’t follow my sister’s recipe, then my method is the best. Anyways my husband said it was delicious, so it was a success.

Servings: 4–5

Time: 40 minutes plus 1 hour for cooking with rice cooker

Ingredients:

  1. 3 cup sweet rice, cleaned and soaked with cold water for 30 minutes
  2. 6 jujubes, removed seed and sliced
  3. 10–12 chestnuts, peeled and cut into half
  4. 2 Ts dried cranberries
  5. 2 Ts pine nuts

For sauce:

  1. 4 Ts soy sauce
  2. 2 1/2 cup water
  3. 1 cup muscovado
  4. 1 ts sea salt
  5. 1 ts cinnamon powder

Cooking Instructions:

  1. Drain the sweet rice with strainer.

2. Mix the muscovado, sea salt, cinnamon powder, and soy sauce into a bowl well. Set aside.

3. Put the sweet rice and water into electric rice cooker.

4. Put the chestnut, jujubes, pine nuts, and dried cranberries into the rice cooker.

5. Add the mixed sauce into the rice cooker to mix well gently.

6. Cook to choose an optional function “mixed”. After 58 minutes, when the rice is done, mix and serve it as a snack.
