Tomato Bulgogi Salad

….It looks so beautiful, and it’s also delicious. It’s a new recipe, which was fun to come up with. It’s a must-have recipe for tomatoes. JOHN said “ wow! It’s gorgeous!” JOHN and I ate it quickly without a word….Hahaha! It’s a good morning. This recipe is from@booth108kwon.

Time: 40 minute plus 6 hr for marinading tomatoes

Ingredients:

Marinading tomatoes:

  1. 3 tomatoes, tomato skin removed
  2. 2 Ts plum extract
  3. 1 lemon juice
  4. 1 Ts honey

Marinading Bulgogi:

  1. 1 1/2 cup beef, sliced thinly
  2. 1 ts sesame oil
  3. 2 Ts Mat-Gan-Jang
  4. 1/8 ts garlic powder
  5. 1/8 ts onion powder
  6. 1/8 ts black pepper

For dressing:

  1. 3 Ts plain yogurt
  2. 1 Ts lemon juice
  3. 1 Ts peanut butter
  4. 1/4 ts sea salt
  5. 1 Ts honey

Salad Vegetables:

  1. 1/2 iceberg lettuce, cut
  2. 1/2 cup red onion, sliced
  3. 1 cup green mix
  4. chives(for garnish: this is optional)

Cooking Instructions:

  1. How to peel tomatoes: Boil some water in a pot. Cut crosswise very thinly with a knife on the top of the tomatoes. Put the tomatoes into boiling water for 1 minute and take out the tomatoes into ice water. You can see the tomatoes starting to peel. Now, peel the tomatoes.

2. Marinade the tomatoes: mix the plum extract, lemon juice, honey and tomatoes into a Ziploc bag for 6 hours and store in the fridge.

3. Meanwhile, mix the sesame oil, Mat-Gan-Jang, onion powder, black pepper, garlic powder and beef into a bowl. Set aside.

4. Mix the dressing ingredients and keep in the refrigerator.

5. Heat a pan with high heat and stir fry the meat until the liquid has disappeared. Set aside.

6. Cut the tomato deeply and add the meat inside the tomato.

7. Serve with the vegetables and dressing sauce.
