Whole Orange Cake
….It looks like a cake, but I changed the ingredients in consideration of my husband’s health. One more thing that my older husband should avoid - pastries, so I started looking for the simplest recipe for him. I am very sad that we have to reduce his favorite food one by one. I found a way to give him a little bit of joy. This homemade orange cake is bursting with the flavor of fresh oranges. It looks rough but tastes good, and my husband is satisfied with the orange cake with a dollop of plain yogurt. Also my daughter LACEY brought some orange flowers from her backyard for decoration of the orange cake. The smell of orange flowers is very strong, and feels refreshing to him. I added almond flour and muscovado instead of flour and white sugar. The result was not perfect but it became a recipe that allows my husband to enjoy a healthier cake. Ingredients:
- 2 whole cara cara orange
- 2 3/4 cups almond flour(or almond meal aka ground almonds)
- 1 1/4 tsp baking powder
- 6 large eggs, at room temperature
- 1 1/4 cups white sugar(or muscovado)
Cooking Instructions:
- Boil the orange in a pot of water for 10 minutes. After 10 minutes, drain the water and pour the cold water into the pot to boil them for 10 minutes(3 times for 10 minutes). This removes bitterness from white part of rind and makes oranges jammy.
2. Chop the boiled orange into small sizes and cool down in a bowl.
3. After cooling down, blend the chopped orange with a blender well.
4. Add the almond flour, muscovado, eggs, and baking powder into the bowl.
5. Blend them with a blender well.
5. Preheat the oven to 320 F. Pour into lined cake pan(1 x 9" pan: 4cm tall).
6. Cook into a preheated oven about 60 minutes(toothpick inserted into centre should come out clean and top should be golden).
7. Turn off the oven heat and remove the cake pan onto a counter. Cool down and invert the cake pan to remove the baking parchment paper.
8. Put some garnish on top of the cake.
9. Lovely served with a dollop of plain yogurt.
