Army Base Stew(Budae-jjigae)
….Have you tried Budaejjigae without Kimchi?? Today I’m introducing you the recipe that is my house version of Budaejjigae. It’s unfamiliar to some people, but it is definitely on my table in Winter. Now Napa cabbage is the most delicious. For that reason, I added fresh Napa cabbage instead of Kimchi. It’s a spicy, savory, and warm dish made from my anchovy broth, hot pepper paste, pepper powder, sausage, and American Spam. You mix all these ingredients together and boiling them. Even though it looks like a simple dish to prepare (just put everything in the pot), it’s not that simple. The anchovy broth takes time and everything should be mostly cooked before you start making the stew. There are a lot of ingredients to this dish but some are optional. It doesn’t have to be the same ingredients as mine, but beef sausage and fresh Napa cabbage are must-have ingredients. I recommend after boiling for 5–8 minutes, you should start eating. It’s also fun to choose from a variety of ingredients. It’s more enjoyable to eat while boiling at the table.

Time: 30 minutes plus 1 hour 30 minutes for making anchovy broth
Ingredients:
- 7 leaves Napa cabbage, cleaned and sliced
- 3 beef frank sausage, sliced
- 2/3 canned Spam(LITE)
- 1 zucchini, sliced
- 2 king oyster mushrooms, sliced
- alba mushroom to taste
- 1/2 cup onion, sliced
- 2 cup soybean sprouts
- 1 Ts butter(or cheddar cheese)
- slices of rice cake to taste
- 1/3 tofu, sliced
- crown daisy for garnish
- 5 cup anchovy broth
- 4 cup steamed rice
For sauce:
- 1 Ts gochujang
- 3 Ts chili powder
- 1 Ts garlic, minced
- 1/2 Ts rice syrup
- 1 Ts sea salt
- black pepper to taste
- 4 Ts sesame oil
Cooking Instructions:
- Place the Napa cabbage, sausage, Spam, mushrooms, zucchini, onion, tofu, butter, slices of rice cake, and soybean sprout onto a stew pot.
2. Mix the garlic, chili powder, gochujang, sea salt, rice syrup, black pepper, and sesame oil into a bowl well evenly. Set aside for 10 minutes.
3. Put the sauce and garnish on top of the stew pot.
4. Pour the anchovy broth into the stew pot to boil them before serving(eat while boiling at the table).
5. Serve it with a bowl of steamed rice.
