Braised Spicy Pork Back Ribs
….These days it’s a hot summertime, but I still need to cook. Even on the hottest days you can always get some energy from your own homemade food. Today I make braised spicy pork back ribs. Because, we can cool down the heat with spicy food even in hot summer — “Fight fire with fire!”. This recipe isn’t easy but the result is great. It’s not greasy at all, and the taste is very refreshing. Even though this recipe was a familiar one for me, the process of making it was longer than I remember. Make sure you find the taste you forgot with this dish.

Time: 1 hour 30 minutes
Ingredients:
- 2.2 lb pork back ribs
- 1500 ml water
- 7 stems green onion, cut into green leaves and white part separately
- 20 cloves garlic
- 1 Ts garlic, minced
- 2 ginger
- 1/2 Ts black pepper corns
- 2 dried red pepper
- 300 g radish, cut into big bite size and curved edges
- 3 Ts Mat-Gan-Jang
- 1 Ts gochujang
- 2 Ts red chili powder
- 1 Ts oyster sauce
- 1 Ts Mirin
- 1 Ts ginger juice
- black pepper to taste
- 1 onion, cut into bite size
- 8 shiitake mushrooms
- 4 green peppers
- 10 pieces cylinder shaped rice cake
- 1 Ts honey
- 1 Ts sesame oil
- 1500 ml boiling hot water
Cooking instructions:
- Put the pork back ribs into a bowl and pour the boiling hot water into the bowl. Set aside for 5 minutes(Remove the blood, excess fat and impurities by soaking with hot water).
2. Clean the pork back ribs with running water one by one. Set aside.
3. Heat a pot with medium heat and add the water(1500 ml), green onion(green leaf parts),10 garlic cloves, ginger, black pepper corns, red pepper, and radish into the pot.
4. After boiling, add the pork back ribs into the pot to boil them for 30 minutes.
5. Turn off the heat and take out the pork back ribs and radishes into a tray. Sift the broth and set aside(save 3 cup of the broth).
6. Mix the Mat-Gan-Jang, gochujang, red chili powder, oyster sauce, Mirin, ginger juice, 1 Ts garlic, and black pepper into a bowl well. Set aside.
7. Heat a pan with medium high heat and grill the shiitake mushrooms, onion, 10 garlic cloves, rice cake, and green onion(white parts) into the pan. Set aside.
8. Heat a pot with high heat and put the boiled pork back ribs, grilled onion, grilled shiitake mushrooms, green peppers, 3 cup broth, and mixed sauce into the pot to boil them for 30 minutes.
9. Add the boiled radishes, grilled green onion(white parts), and grilled rice cake into the pot until the moisture is reduced. Sprinkle the honey and sesame oil into the pot. Turn off the heat.
10. Serve it hot with a bowl of rice(or corn rice).
