Cabbage Roll with Flavored Ground Pork Flakes(Pork Soboro)

….This simple roll is great for summer. It looks cool and tastes clean, making this dish something I keep eating over and over again. The cabbage roll is very mild and pork soboro is little spicy and savory. They are a great combination. While I was making this roll, my husband JOHN said “I will only eat two or three pieces.” I guess this food didn’t look appetizing to my husband. When I made rolls only with cabbage, I wasn’t like that too. But the pork soboro brought a nice change to the taste and plating. Wow! this is so delicious. JOHN gobbled it up. Also I added some garlic chips on top of the rolls. This recipe is from @booth108kwon.

Servings: 2- 3

Time: 40 minutes

Ingredients:

  1. 10 pieces cabbage leaves, parboiled and cooled down
  2. 2 cup steamed rice
  3. 0.5 lb ground pork
  4. 1 cup sweet baby cauliflower, cut into small size(or asparagus)
  5. 2 Ts sesame oil
  6. 1 Ts garlic, minced
  7. 2 Ts green onion, minced
  8. 1 Ts ginger juice
  9. 1 Ts gochujang
  10. 1/2 Ts chili powder
  11. 1 Ts Mat-Gan-Jang
  12. 1 Ts Mirin
  13. toasted sesame seeds to taste
  14. sea salt to taste

Cooking Instructions:

  1. Heat a pot with medium high heat and add some water into the pot to boil it. Parboil the cabbages for 10–15 seconds and take them out into a tray to set aside.

2. Heat a pan with medium heat and add 1 Ts sesame oil, garlic, and green onion to stir them for 2 minutes.

3. Add the ground pork into the pan to stir them until the moisture is gone.

4. Add the ginger juice into the pan and stir them for 1 minute.

5. Add the sweet baby cauliflower, gochujang, chili powder, Mat-Gan-Jang, and Mirin into the pan to stir them until the moisture is gone.

6. Sprinkle 1 Ts sesame oil and toasted sesame seeds into the pan. Turn off the heat and set aside.

6. Put the steamed rice into a bowl and season a pinch of sea salt and a few drops of sesame oil into the bowl. Mix them gently.

7. Place 5–6 pieces parboiled cabbages on a bamboo mat. Evenly spread about 3/4 cup of cooked rice over top of it.

8. Grab the mat with both hands and press it tightly as you continue rolling the roll. Push out the mat as you roll, so it doesn’t get wrapped in the roll. Repeat 1 more time with the remaining ingredients.

9. Slice the cabbage roll into one bite size and place them onto a serving dish.

10. Put the pork soboro on top of the cabbage roll.

11. Serve it(if you have some garlic chips, put some garlic chips on top of the pork soboro).
