Chinese Seafood Noodle Soup(Seafood udon)
….How about making delicious and easy Chinese seafood noodle soup? It’s something that I can always make quickly for lunch or when people suddenly come over. What makes for a delicious noodle soup? I think there needs to be good noodle and a nice broth. I bought our favorite noodle(potato noodle) from a market, and used mixed chicken broth and beef broth but you could use vegetable broth or any of your favorite stock. All cultures rely on stock to make their soups and stews delicious. It’s different than the traditional way of making it. That way uses chicken broth with some seafoods and chopped vegetables as a garnish. I made it simple, but looked fancy. My husband who likes sujebi(hand torn noodle soup), also enjoyed it. Especially, the broth was delicious for us and we ate it all. Thanks for today.

Ingredients:
- 300 g noodles
- 2 eggs, beaten
- 2 cup napa cabbage, sliced
- 1/2 cup carrot, julienned
- 1/2 onion, sliced
- 50 g bamboo shoots, sliced
- 2 bok choy
- 1 Ts garlic, minced
- 1/2 squid, sliced
- 6–8 shrimps
- 6–8 scallops, sliced
- 2 abalones, sliced
- 600 ml chicken broth
- 600 ml beef broth
- 1 Ts mirin
- 2 ts sea salt
- 1/3 ts black pepper
- 1 ts sesame oil
Cooking Instructions:
- Heat a pot with high heat and add the chicken broth and beef broth into the pot to boil.
2. After boiling, put the shrimp, scallops, abalone, squid, and mirin into the pot to parboil them until 80% cooked(do not cook completely) for 1 minute.
3. Take out the parboiled seafood onto a tray. Set aside.
4. Add the napa cabbage, bamboo shoots, carrots, onion, bok choy, and garlic into the pot to boil them for 1 minute(remove any floating bubbles with a spoon).
5. Sprinkle the beaten egg into the pot(leave the egg until they are cooked, do not stir them).
6. After boiling, add the parboiled seafood, sea salt, and black pepper into the pot. Turn off the heat and sprinkle the sesame oil into the pot(add some sea salt, if it is too bland).
7. Heat a pot with high heat and pour 8 cup water into the pot to boil. Add the noodle into the pot to boil it for 3–5 minutes.
8. Sift the noodle with a strainer after rinsing in cold water.
9. Place the noodle onto a serving bowl and pour the seafood soup on top of the noodle. Serve it quickly.
