Deep Fried Onion with Rice(Donburi)
….Since childhood, I’ve always incorporated onions into many dishes for my children. They provide a sweet taste without using sugar, help prevent cardiovascular diseases, and are economical, making them undoubtedly a vegetable that brings benefits with increased usage. Even now, my daughters are fond of roasted onions. A long time ago, my mother-in-law used to make scrambled eggs with onions for my father-in-law’s breakfast, removing the egg yolks every morning as part of my father-in-law’s blood pressure management routine. Also this onion and egg combination became my husband’s favorite breakfast dish without a doubt. The sweetness onions and eggs create a taste sensation beyond imagination, making it the perfect breakfast. Before you know it, the plate is empty, and he says, “I already feel warm inside.” The satisfaction level is incredibly high! Today, I fried the onions to a crisp, paired them with soy sauce, and served them over rice with a light layer of egg. Frying is undoubtedly one of the best cooking methods, so it’s impossible for it not to taste good. It’s a simple recipe that anyone can make with just a few ingredients, so I highly recommend giving it a try without hesitation. The crispiness and sweetness of the thick-cut fried onions, combined with the softness of the egg and the savory soy sauce, create a fantastic harmony that I want to remember as a recipe that’s not just visually appealing but also memorable in taste.

Ingredients:
- 300 g onion, sliced
- 3–4 cups steamed rice
- 125 ml udon sauce base
- 400 ml water
- 6 eggs
- alba mushroom to taste (optional)
- sea salt to taste
- Dried seaweed to taste
- Canola oil for frying
- pickled radish (optional)
For fried batter:
- 1 cup mixed fried powder
- 150 ml water
- 1/4 tsp baking powder
Cooking Instructions:
- Place the sliced onion in a bowl, then add the mixed fried powder, baking powder, and water. Mix gently until well combined.
2. Heat a pan over medium-high heat and add canola oil. Heat the oil to 140°C (you can test it with a wooden chopstick — there should be bubbles around it). Place several layers of paper towels on a sheet pan. Fry the onion mixture until golden brown.
3. Place them on the sheet pan. Set aside.
4. Heat a small pan over medium heat and add the udon sauce base, water, and alba mushrooms to the pan. Bring to a boil.
5. After boiling, beat the eggs and pour them into the pan for 1 minute (do not stir the eggs). Remove the pan from the heat.
6. Place some steamed rice in a serving bowl.
7. Place the fried onion on top of the rice.
8. Pour the egg sauce over the fried onion.
9. Serve it with some dried seaweed on top and some radish pickles.
