Eggplant Rice Hot Pot
….I got some eggplants as the last harvest of the year from my garden today. I was happy with the vegetables that hung beautifully during the summer. I was thinking about them for a while, and then I decided to make an eggplant rice pot. It needs only a few ingredients, but I added some meat for my husband who likes meat. We really liked the flavor of the lightly fried eggplant. My husband and I didn’t know if we would scrape to the bottom of the pot. The eggplants tasted very sweet, soft, and satisfying. Making and sharing food make me always happy. I have to take good care of my health so that I can share this joy. I finished the day with many thanks.

Time: 30 minutes plus 30 minutes for marinating meat
Ingredients:
- 3 cup egg plants, cut into one bite size
- 1/2 lb beef, sliced
- 1 1/2cup white rice, cleaned
- 1 1/4 cup anchovy broth
- 2 ts sesame oil
- 10 toasted ginkgo
- 3 stems green onion, minced
- 1 Ts soy sauce
- 1/2 Ts sugar
- 1/2 Ts plum extract
- 1/2 Ts Mirin
- 1 ts garlic, minced
- 1 ts sesame seeds
- 1 ts sesame oil
- black pepper to taste
For sauce:
- 1 Ts soy sauce
- 1 Ts sugar
- 1 Ts chili pepper
- 1 Ts sesame oil
- 2 Ts water
- 1 Ts sesame seeds

Cooking Instructions:
- Mix the beef, soy sauce, sugar, Mirin, plum extract, garlic, sesame seeds, green onion, sesame oil, and black pepper into a bowl well. Set aside for 30 minutes.
2. Heat a pot with medium heat and add the sesame oil and rice into the pot to stir fry for 1 minute.
2. Pour the anchovy broth into the pot to boil them for 6 minutes with a lid.
3. Heat down to low heat and keep heating them for 10 minutes with the lid.
4. Meanwhile, heat a pan with medium high heat and add some avocado oil into the pan to stir the egg plant until lightly brown and marinated beef until the moisture is gone. Set them aside.
5. Put the cooked eggplant, beef, and toasted ginkgo onto the top of the rice pot to keep heating for 5 minutes with the lid.
6. Mix the soy sauce, sugar, chili pepper, sesame oil, water, and sesame seeds into a bowl. Set aside.
7. Turn off the heat and sprinkle some green onion. Mix them lightly and serve it with sauce.
