Pocket Sandwich
….When I was going to have lunch by making a pocket sandwich with leftover pita and hummus, we laughed again and ate lunch with my husband’s one question…. He asked me “How did you get this bread to make a pocket?” …Ummm I didn’t know what to say at first. He looked at the pocket sandwich many times as if it was strange, but the curiosity was still there. My husband, who still doesn’t know what everyone knows, has so much fun. When I said “I attached it with steam rice” as an answer, he didn’t believe it and was smiling. Pita is a type of versatile flat bread that is soft and slightly chewy and often features a pocket inside, which is the result of baking the bread in a hot oven. The bread can be eaten plain or dipped in olive oil. It can be topped with spreads and meats, folded over, and eaten as a sandwich or the pocket can be stuffed with various filling and served as a toasted or baked sandwich. Now my husband knows that pita bread has a pocket….

Time: 20 minutes
Ingredients:
- 2 pitas
- hummus to spread
- ricotta cheese to taste
- 1 cup baby kale
- 1 cucumber, cut into small size
- 1 avocado, cut into small size
- cherry tomatoes to taste
- blueberries to taste
- blackberries to taste
- walnut to taste
- olive oil
- balsamic vinegar
Cooking Instructions:
- Put the baby kale, cucumber, cherry tomatoes, blueberries, blackberries, avocado, and walnut into a bowl.
2. Drizzle some olive oil and balsamic vinegar into a bowl and toss them gently. Set aside.
3. Heat a pan with medium heat and grill the pita lightly both sides.
4. Cut the grilled pita into half.
5. Spread the hummus inside one side of pita and then spread some ricotta cheese on top of the hummus.
6. Put the mixed filling(salad) inside the pita.
7. Serve it.
