Shrimp and Vegetable Fried Rice

….For the first time in a long time, I went to go grocery shopping at a farmers market. I picked up lots of fresh green peas, broccolinis, and sweet baby cauliflowers. Workers’ hands were busy arranging fresh vegetables. It was really nice to feel the rush that I hadn’t felt in a long time……… I can decide what kind of dish for dinner on the way home. “Fried rice with fresh vegetables!” The richness of the ingredients upgrades the taste. I added shrimp and eggs.

Servings: 4

Time: 40 minutes

Ingredients:

  1. 4 cup steamed rice
  2. 2 cup shrimp, peeled and cut into one bite size
  3. 1 1/2 cup broccolini, cut into one bite size and soaked into cold water
  4. 1 1/2 cup sweet baby cauliflower, cut into one bite size and soaked into cold water
  5. 3/4 cup fresh green peas, peeled
  6. 1 1/2 red pepper, sliced
  7. 3 Ts green onion, minced
  8. 2 Ts Mat-Gan-Jang
  9. 5 eggs
  10. 1 Ts toasted sesame seeds
  11. 2 Ts sesame oil
  12. 4 Ts avocado oil
  13. sea salt to taste
  14. 1 Ts ginger juice

Cooking Instructions:

  1. Mix the shrimp with ginger juice about 20 minutes. Set aside.

2. Heat a pot with medium heat and add 3 cup water and 1 ts sea salt into the pot to boil it. Parboil the broccolini, sweet baby cauliflower, and green peas into the pot for 30 seconds separately. Sift them and set aside.

3. Heat a pan with medium high heat and add 2 Ts avocado oil into the pan. Beat the eggs into a bowl with a little sea salt. Pour the egg into the pan to make egg scrambles. Turn off the heat and set aside.

4. Heat a pan with medium heat and add 2 Ts avocado oil and green onion into the pan to stir fry for 1 minute.

5. Add the shrimp into the pan to keep stirring them until shrimp is cooked.

6. Add the steamed rice and 2 Ts Mat-Gan-Jang into the pan to mix them well evenly.

7. Add the broccolini, sweet baby cauliflower, green peas, egg, sesame seeds, sesame oil, and red pepper into the pan to keep stirring them for 1-2 minutes. Add some sea salt if it’s too bland.

8. Serve it.
