Shrimp Fried Rice

….Shrimp Fried rice is a simple dish that almost everyone loves. This recipe is the one I’ve been making for my family for years and years. It’s great for cleaning out all the leftover vegetables in your fridge. You can wrap this shrimp fried rice for a lunch box or serve it at a main dish at a potluck party. The flavors are rich and I guarantee you will get some compliments on it.

Servings: 4

Time: 40 minutes

Ingredients:

  1. 4 cup steamed rice
  2. 2 cup shrimp, cut into an half
  3. 2 cup broccoli, clean and soak into cold water
  4. 5 eggs
  5. 1 cup green onion, minced
  6. 2 Ts Mat-Gan-Jang
  7. 1 Ts toasted sesame seeds
  8. 2 Ts sesame oil
  9. avocado oil to stir fry
  10. sea salt to taste
  11. 1 Ts ginger juice

Cooking instructions:

  1. Mix the shrimp with ginger juice about 20 minutes. Set aside.

2. Heat a pot with high heat and add 3 cup water to boil it. Parboil the broccoli into the pot for 30 seconds and turn off the heat. Sift the broccoli and set aside.

3. Heat a pan with medium high heat and add 2 Ts avocado oil into the pan. Beat the eggs into a bowl with a little sea salt. Pour the egg into the pan to make egg scrambles. Turn off the heat and set aside.

4. Heat the same pan with medium high heat and add 3 Ts avocado oil and shrimp into the pan to stir them until cooked.

5. Add the steamed rice into the pan to keep stirring them softly.

6. Add the green onion and 1 Ts avocado oil into the side of the pan to stir fry the green onion for 1–2 minutes.

7. Add the egg scrambles and parboiled broccoli into the pan to keep stirring all together and add Mat-Gan-Jang to mix them well.

8. Add some sea salt if it’s too bland and add toasted sesame seeds and sesame oil into the pan. Mix them well evenly.

9. Serve it.
