Stir-fried Asian chives, Beef and Vegetables with Chinese Steamed Bun(Boochu-Japchae & Kkotbbang)

….One of my family’s favorite dishes at Korean-Chinese restaurants. It’s even more delicious with a side of kkotbbang which is a classic Chinese bread. Boochu-japchae is also an extremely quick and easy dish to make. Boochu is an Asian chive and it doesn’t matter whether you use the Korean kind or Chinese kind. This recipe uses Asian chives, so I can say it’s a chive-focused japchae. If you don’t have Boochu, simply replace it with 2 or 3 more bell peppers of any color and thinly julienne them.

Time: 50 minutes

Ingredients:

  1. 2 cup beef, thinly sliced
  2. 1 greed bell pepper, julienned
  3. 1 red bell pepper, julienned
  4. 1 yellow bell pepper, julienned
  5. 2 cup Asian chives, cut into 1.5 inches
  6. 1 cup onion, sliced
  7. 10 pieces Chinese bun, steamed
  8. 1 1/2 Ts chili oil
  9. 2 Ts Mat-Gan-Jang
  10. 1/2 Ts garlic, minced
  11. 3 ts sesame oil
  12. 2 ts oyster sauce
  13. water starch to reduce moisture
  14. black pepper to taste

Cooking Instructions:

  1. Marinade the beef, 2 Ts Mat-Gan-Jang, garlic, 2 ts sesame oil and black pepper into a bowl well and set aside for 20 minutes.

2. Heat a pan with high heat to stir fry the marinaded beef until well done and turn off the heat. Set aside.

3. Heat the same pan with high heat and add chili oil into the pan.

4. Add the onion into the pan and stir fry them for 1–2 minutes. Add the green bell pepper, yellow bell pepper and red bell pepper into the pan to keep stirring them 1 minute.

5. Add the stem parts of the chives into the pan to stir them for 30 seconds.

6. Add the cooked beef and the leaves part of the chives into the pan to keep stirring them 30 seconds. Turn off the heat and sprinkle 1 ts sesame oil.

7. Heat a steamer with medium high heat and put the Chinese bun into the steamer for 5 minutes. Turn off the heat and serve the stir-fried Asian chives with Chinese steamed bun and soy sauce with vinegar.
