Stir-fried Dried Acorn Jelly

….My sister’s parcel is a day loved by me, and she lives far away in Seoul, Korea. She sends me some Korean ingredients often. Today I got a new ingredient inside the box that was dried acorn jelly. I’ve never tasted it before. I really enjoyed the variety of ingredients. My sister taught me how to cook this dried acorn jelly. Also she said this is not everyone’s favorite ingredient, as some people like it and some people don’t. I started to cook it out of curiosity. The process included soaking them with cold water for 2–3 hours and then boiling them for few minutes. It needed some preparing time. Finally I stir-fried this dried acorn jelly with vegetables. It tasted very mild and texture was like jelly that was very unique. It is a side dish that can only be found at a rural restaurant. Thanks to my sister and thumbs up for the taste.

Servings: 3

Time: 20 minutes plus 2 hours soaking with cold water

Ingredients:

  1. 50 g dried acorn jelly, soaked and boiled
  2. 3–4 shiitake mushrooms, sliced
  3. 3 stems green onion, cut into 1.5 inches
  4. 1 red pepper, removed seeds and sliced into 1.5 inches
  5. 2 green pepper, removed seeds and sliced into 1.5 inches
  6. 1/2 onion, sliced
  7. 1/2 Ts garlic, minced
  8. 1 ts gukganjang
  9. 2 ts Mat-Gan-Jang
  10. 1/2 Ts rice syrup
  11. 1/2 cup anchovy broth
  12. 1/2 Ts perilla oil
  13. toasted sesame seeds to taste
  14. a pinch of sea salt
  15. 1 Ts avocado oil

Cooking Instructions:

  1. Soak the dried acorn jelly into a bowl with cold water for 2 hours.

2. After 2 hours, put a pot with high heat and add some water to boil.

3. Put the soaked dried acorn jelly into the pot to boil until softened for 3–5 minutes.

4. Sift the acorn jelly with a strainer.

5. Heat a pan with medium low heat and add the acorn jelly, shiitake mushrooms, gukganjang, Mat-Gan-Jang, garlic, rice syrup, and anchovy broth into the pan to stir them for 5–7 minutes. Set aside.

6. Heat another pan with medium high heat and add the avocado oil, red pepper, green pepper, green onion, onion, and a pinch of sea salt into the pan to stir them quickly for 1–2 minutes.

7. Add the stirred acorn jelly and perilla oil into the pan to stir them for 1 minute. Turn off the heat and sprinkle the sesame seeds into the pan.

8. Serve it as a side dish.
