Stir-fried Seafood with Bok choy

…….This recipe is the one I’ve been making for my family for years and years. They always accommodated this dish as a main dish nicely. Seafood becomes tough if cooked for a long time, so stir-fry quickly before serving. The flavors are rich and I guarantee you will get some compliments on it. It is enough for anyone to make their own main dish by choosing the ingredients they want. Bok choy tastes similar to cabbage. It has a mild, fresh, and grassy flavor. The stalks have a celery- like crunch, while the leaves are soft and crisp. It’s good, if you eat the leftover over rice. It’s fun picking out my favorite. Servings: 4–5

Time: 50 minutes

Ingredients:

  1. 7–8 bok choy
  2. 1 ts avocado oil
  3. 3 stem green onions
  4. 3 garlic cloves
  5. 1 bamboo shoots, slice flat in uniform size
  6. 4 dry shiitake mushroom, soak in water and cut
  7. 10 scallops, cut in half
  8. 1 squid, cut in uniform size
  9. 3 dried sea cucumber, boiled and cut in uniform size(this is optional)
  10. 10–15 shrimp, peel the skin and cut in half
  11. 3 king oyster mushroom, slice flat in uniform size(this is optional)
  12. 1Ts green onion, 1Ts garlic , 1/2 ts ginger, minced
  13. 2–3 Ts chili oil
  14. 1 cup chicken broth
  15. 1 Ts oyster sauce
  16. 1 Ts soy sauce
  17. 2 Ts sake
  18. Mixed 2 Ts potato starch , 2 Ts water
  19. 2 Ts sesame oil, 2 Ts toasted sesame seeds

Cooking instructions:

  1. Boil 1L water in a pot with 1 ts avocado oil, 3 stem green onions, 3 garlic cloves.

2. Put the bok choy in boiling water for 10 seconds. Sift it and set aside.

3. put 3Ts chili oil on a pan, add the green onion, the garlic, the ginger and fry them.

4. Add 1Ts soy sauce, 2Ts sake, shiitake mushroom, king oyster mushroom, dried sea cucumber, and bamboo shoots into the pan to stir- fry them lightly.

5. Add the scallop, shrimp, and squid, then fry for 2 minutes.

6. Add the chicken broth, boil them until cooked.

7. Add the oyster sauce and reduce the heat down to low, mix the water starch into the pan.

8. Turn off the heat, add the parboiled bok choy, sesame oil, toasted sesame seeds.

9. Serve them.
