Tofu with Stir-Fried Kimchi and Pork(Dubu Kimchi)
….Tofu is one of my family’s favorite ingredients. We are crazy about all tofu dishes. Stir fry kimchi and pork and serve with sliced tofu that has been boiled. My favorite way to use up aging kimchi is this dish. I usually boil the tofu because we like it warm and soft. This is one of the most common and popular side dishes, and almost every family has their own recipe for it in Korea. You can serve this dish as a side or a main dish with a bowl of rice. It’s also a big plus that it’s easy to make.
Servings: 3–4
Time: 30 minutes plus 30 minutes for marinading pork belly
Ingredients:
- 1 cup pork belly, sliced thinly
- 1 Ts ginger juice for cooking
- 1 1/4 Ts chili powder
- 1 Ts gochujang
- 1/2 Ts Mat-Gan-Jang
- 1/2 ts fish sauce
- 1 Ts Mirin
- 1 Ts minced garlic
- 1/2 Ts sugar
- 1/2 Ts honey
- 1 Ts chili oil
- 1 onion, sliced
- 5 garlic cloves, sliced
- 2 stems green onion, cut into 1.5 inches
- 1 cup kimchi(up aging kimchi), cut into one bite size
- 1 Pack tofu
- 5 perilla leaves, sliced for garnish
- sesame seeds to taste
- sesame oil to taste
Cooking Instructions:
- Put the pork belly and ginger juice into a bowl to mix well. Set aside for 20 minutes.
2. Meanwhile, mix the chili powder, gochujang, Mat-gan-Jang, fish sauce, Mirin, minced garlic, sugar, and honey into a bowl to mix well. Set aside.
3. After 20 minutes, mix the pork belly and the sauce well evenly. Set aside for 30 minutes.
4. Heat a pan with medium heat and add the chili oil, onion, and garlic to stir them for 1–2 minutes.
5. Add the marinaded pork into the pan to keep stirring them until cooked(use a torch to upgrade the flavors).
6. Add the kimchi into the pan to keep stirring them 1–2 minutes. Add some Mat-Gan-Jang into the pan if it’s too bland. Turn off the heat and sprinkle some sesame seed, green onion, and sesame oil into the pan. Set aside.
7. Heat a pot with medium low heat and add 2 cup water and tofu into the pot to boil it for 2–3 minutes. Sift the tofu and slice into small sizes onto a serving plate.
8. Serve them all together as a side dish or main dish.
